2 cups fine ground Almond Flour*
1/4 cup Sorghum flour
1/4 cup Cassava flour
2 tbsp peanut or avocado oil
1/4 cup water
1 tsp pink salt
Add in flavor like, roasted veggie, red or green onions, bacon, herbs and spices.
Preheat oven to 425° F. Place a piece of parchment paper on a baking tray and set aside.
In a large bowl, whisk together the dry ingredients until well incorporated and fluffy.
Add the oil and mix to distribute then add in anything else you like with the water and mix together just to combine.
Turn out combined dough onto the parchment paper creating a mound in the middle. Then cut into sections like a cake slice and pull the pieces away from each other to allow room for the air to circulate the scone slice.
Bake for 15 minutes or until firm to the touch and golden brown. This is a fairly forgiving recipe so if you make it too wet or dry or over baked, they’re still good.
* I use Kirkland Signature brand Fine Ground Almond Flour from Costco. If your batter is too wet to hold shape, add a bit more Almond Flour. If it is too dry and crumbly, a little more water. You can make any mini shaped bites out of this batter. Cooking times will vary.
