Not Exactly Eggs Benedict

I love this gluten, dairy and sugar free dish because you get the best of a recipe with a much easier ingredient list and some leftovers to do it all over again.

Instead of a Hollandaise sauce, I used baked beans. These beans are the simplest to make and always taste perfect. The eggs are grub fed from http://www.earlybirdfarmer.com/, the beans are organic great northern beans from Trader Joes, the uncured sliced ham is from https://www.organicvalley.coop/products/meats/ and it is all topped upon my 2 ingredients gluten free tortillas. These tortillas are so delicious with nothing on them so you know they are a perfect choice with all these other great ingredients.

2 eggs

2 slices of uncured ham or leave out if it doesn’t fit within your food regime

2 GF tortillas
3 cups almond meal Kirkland Signature Blanched Almond Meal from Costco
1.5 cups Bobs Red Mill Tapioca Flour
.5 tsp of pink salt Costco
.25 cup of water

1 can TJ’s organic great northern beans
2-3 tbsp of maple syrup Costco
2-3 tbsp of Pomi tomato sauce
1 tbsp of onion powder
dash of pink salt Costco

Tortillas-
Heat a cast iron pan on medium heat
Mix the almond flour, tapioca starch and salt with a whisk until well combined
Add the water and mix with your hands to combine all the ingredients until you get a solid ball. If it is too wet, add some more almond flour. If it is too dry, add a tsp of water at a time until combined and does not stick to your hands.
Divide dough into equal balls, size of your choice, press with a tortilla press or roll with a rolling pin between two sheets of plastic wrap.
Drop raw tortilla into the hot pan and cook on one side until bubble form and edge is cooked. Then flip for 30 seconds.
Repeat with the rest of your tortilla balls. Let cool and store in a plastic bag on the counter. Should make 9-15 tortillas

Warm the ham in the oven on a piece of parchment paper or warm in a non-stick pan on low heat

Baked Beans –
Empty out most of the bean liquid. You can keep to make mayo or aquafaba recipes or just drain. Add in the rest of the bean recipe and stir well. Simmer until bubbly and turn off the heat.

Poaching an egg –
Fill a saucepan half way full of water. Bring to a boil. Crack one egg into a measuring cup or large spoon and gently slip it into the boiling water. Repeat with remaining egg. Simmer for about 5 minutes over medium heat. Remove with a slotted spoon, drain against a napkin then set aside on parchment paper and keep warm.

Time to assemble. place down the tortilla, add the ham slices, beans then top with the egg and add a drizzle of bean liquid on top with a dash of pink salt.
