Being part of something so time honored as starting a traditional recipe from scratch, is one of my fondest Chef Sessions. This Gumbo session was awesome!
My ego has a hard time when it doesn’t turn out perfect for my clients but traditions are all about how it evolves over time when you are creating it with ones you love. That’s what’s perfect.
