Curry fish, Veg and Jasmine Rice w/ Cilantro & slivered Almonds

I had gone to my favorite Thai Restaurant Banyan Tree in Kent Station. They know how to keep your meal Gluten Free and they have the yummiest menu! I ordered the Pineapple Curry and asked for some extra sauce.

I saved and froze the sauce for a future date. I was trying to think of something fun to prepare that my friend has not had yet.

It worked out perfect. I had an organic yellow bell pepper left from my Trader Joes 3 pack, Organic baby spinach a nice piece of fish also from TJ’s and my left over sauce.

So I made some Jasmine Rice with Cilantro and Almond slivers in the rice cooker.

I sauteed the pepper in a touch of olive oil. Once the pepper was just cooked, I then dropped a bunch of fresh organic spinach leaves on top, turned it off and put a lid on it. The best way to wilt spinach and it finished cooking the pepper to soft.

The fish only takes a moment so I put it in a pan with a drizzle of curry sauce on it and steamed it to perfection.

Once the rice was done, it went down first, then the veg, then the fish and topped with sauce.

It was AMAZING!!! All that flavor was just waiting for me to use and the meal was ready in 20 min with about 8 min of prep.
