Chicken in Sweet Pepper Sauce is one of our favorite dishes. It is an easy recipe of sweet peppers, spices and chicken served over cumin basmati rice with peas. This Indian dish is from the cookbook by Madhur Jaffrey’s simply titled Indian Cooking.
I love this dish because it is completely free of Gluten, Dairy and Sugar so you can follow it exactly. Be careful to not assume all Indian dishes are Gluten or Dairy free. They do not use much in the way of sugar but Ghee, clarified butter, is used quite often and Naan is made from traditional wheat.
