- ½ cup coconut oil, softened
- ⅓ cup maple syrup or Coconut Nectar
- 11 cup brown rice flour
- ¾ cup tapioca starch,
- ½ cup sweet rice flour,
- ½ tsp guar gum
- ¼ tsp pure vanilla extract
- dash of salt
Whip the coconut oil and sweetener and vanilla together until combined. Then add combined dry ingredients and mix with your hands until completely incorporated and you can make a ball that is not sticky but holds together.
Lay down some plastic wrap and shape the dough into a rectangle. Cover with plastic wrap and roll out to about 1/4″ thickness. Then cut out with fun cookie cutters, lay out on parchment and bake for 11-13 min on 350º preheated oven.
(You will repeat the rolling process more than a few times to use all the cookie dough.)
Remove when golden brown and let cool. Then sandwich with any jam you like and dust with powdered coconut milk. Enjoy until gone.
