Dairy Free Maple Sweetened Fudgsicles

This recipe is super easy with just one step set up. The base for this fudgsicle recipe is pistachios but you can use cashews and even avocado. Since I made these for someone who does not do well with fruit, I chose Pistachios.

If you are using nuts, they must be soaked for at least 4 hours but 8 is best. Also, do not use the soaking liquid. Be sure to rinse and drain them well.

There is always one exception that proves the rule and that is Hazelnuts which I use for the milk, specifically because I don’t have to soak them. I like the Hazelnut milk flavor the best and unlike Almonds they can go straight into the blender. You always want to soak almonds before making milk to release the enzyme that can cause tummy upset.

Ingredients
8 oz Raw Pistachios – soaked for 4-8 hrs – drain and rinse well
12- 16 oz Hazelnut Milk 6 oz Hazelnuts blended with 24 oz purified water
3/4 cup maple syrup
1/4 – 1/2 cup quality cocoa powder
1/4 cup peanut or coconut oil
1 tsp ground vanilla bean
1/2 tsp pink salt

Nut Milk
Blend nuts and water on in a Vitamix or similar blender on high speed for 30 seconds to ensure the nuts are completely broken down, then pour into a a nut milk bag that is sitting in a large enough container. Let the milk sit for about 10 minutes then squeeze the nut milk bag until the liquid is removed. You will have more milk than the recipe calls for. Store in the remaining milk in the fridge for up to three days and use for anything that calls for milk. Even cereal!

You can freeze the wet meal to use for later or dry in a dehydrator or the oven on low until dry, then blend to smooth and freeze for later. There are so many recipes that call for hazelnut flour.

Fudgsicle
Add all the ingredients except for the oil into the same blender, rinsed clean of the blended nut milk, and blend on high until smooth and light. About 5 minutes. There should be no texture. If you have any continue to blend until light and smooth. If you mixture is too thick for the blender, add a bit more nut milk. Then add the oil and blend until incorporated.

Pour into molds and freeze. Enjoy!
